This "Shakushina" is a plant that thrives in the Chichibu region's unique natural environment: harsh winters, an inland climate, and rocky, clayey soil.

Its official name is "Seppa-tai-sai" (meaning "Snow-white vegetables"). it's called "Shakushina" because it resembles a rice paddle (shamoji).

Pickled Shakushina is delicious on its own, but it's also perfect stir-fried or used as a filling for steamed buns. @(Nihedon @ KesaranPasaran Lab)
